Does signing up for one language give you access to multiple languages?

One subscription gives you access to all languages (so you can learn more than one language at once). 

For teacher accounts, signing up for a paid account also gives you the flexibility to use all of the FluentU languages. You can only assign one language per class, but you can create multiple classes.
