All plates are individual. Patrons are usually in and out, so the tables are freed up quicker for other people. You pay first, then get your food. They are often family-owned and independently run. You pay whoever is cooking. Someone will be there to answer any questions you have, but you hand-select your skewers and give them to the cook. You may be given a basket to load your skewers into if you\u2019ve chosen that many.<\/p>\n<p>If the \u70e7\u70e4 place is outside of a restaurant, you&#8217;ll likely have to pay at the register and hand your receipt to the cook so he knows what you paid for.<\/p>\n<p>Here are some \u70e7\u70e4 phrases that will come in handy:<\/p>\n<ul>\n<li>\u4e32<em> (chu\u00e0n)<\/em> \u2014 Skewers<\/li>\n<li>\u5c11\u6cb9 <em>(sh\u01ceo y\u00f3u)<\/em> \u2014 Not too much oil. Some barbecue places tend to use a lot of oil, especially if they cook on a hot plate<\/li>\n<li>\u8fa3\/\u4e0d\u8fa3<em> (l\u00e0\/b\u00fa l\u00e0)<\/em> \u2014 Spicy\/not spicy<\/li>\n<li>\u505a\u957f \u4e00\u70b9 <em>(zu\u00f2 ch\u00e1ng y\u012b di\u01cen)<\/em> \u2014 Please cook it a little more. The waiters will be well-dressed, a hostess will welcome you, complimentary tea will be provided and the lighting and decor will show that the owners splashed some cash. That\u2019s how it looks, but it will be a full-on, Chinese-style food experience. Here, we&#8217;ll give you a few pointers to help you adjust to the environment.<\/p>\n<p>This information is\u00a0mainly for mainland China, so just keep in mind that different Mandarin-speaking regions may have different restaurant etiquette.<\/p>\n<p><strong>Napkins<\/strong>. When you arrive at your table, you&#8217;ll likely see a package of paper napkins. This isn&#8217;t complimentary. Most Chinese people carry a packet of tissues with them because bathrooms aren\u2019t stocked with toilet paper. If you open the package, you\u2019ll have to pay for it.<\/p>\n<p><strong>Getting Your Waiter\u2019s Attention<\/strong>. If you need the waiter\u2019s attention, yell<strong>\u670d\u52a1\u5458<\/strong> <em>(f\u00fa w\u00f9 yu\u00e1n)<\/em> \u2014 Waiter. When I say \u201cyell,\u201d I mean <em>yell<\/em> it. If others hear you calling for the waiter but the waiter can\u2019t hear it himself, it&#8217;ll look like he&#8217;s not responding to you. Waiters appreciate the yelling because they feel they should be the first ones to know you need something.<\/p>\n<p>When traveling outside mainland China, look around first. If the restaurant isn&#8217;t loud or busy, raising your hand may do the trick. Use your best judgment!<\/p>\n<p><strong>Water<\/strong>. Soup is usually the liquid for the meal, and alcohol is often ordered as well. If you want water, you&#8217;ll likely have to request it.<\/p>\n<p><strong>The (Vast) Number of Plates<\/strong>. If you&#8217;re ordering, the dishes ordered should outnumber the people eating with you. You&#8217;re welcome to offer others their choice, but if everyone chooses and there still aren\u2019t more dishes than people, you need to come up with the rest on your own.<\/p>\n<p><strong>Bones<\/strong>. Chinese meat dishes have <em>tons<\/em> of tiny little bones. In Chinese food etiquette, these are set aside in a bowl provided by the restaurant. If there&#8217;s no bowl, you put your bones directly on the table next to your plate.<\/p>\n<p><strong>Tips<\/strong>. Tipping the waiter isn&#8217;t a common practice in China. Your bill won&#8217;t include gratuity since the waiter is \u201cdoing his job.\u201d If you still want to tip the waiter, you can hand him the tip and say <strong>\u5c0f\u8d39<\/strong> <em>(xi\u01ceo f\u00e8i)<\/em> \u2014 Gratuity, literally meaning &#8220;small fee.&#8221; Even though it&#8217;s not expected, they&#8217;ll appreciate it.<\/p>\n<p><strong>Doggie Bags<\/strong>. Taking a doggie bag isn\u2019t a given, so see if other guests do it first. Not all restaurants are prepared to make doggie bags, so if you ask and they don\u2019t have containers, they&#8217;ll feel like they didn\u2019t do their job. If they do have containers, you\u2019ll have to box your food yourself, and you may have to pay for the containers.<\/p>\n<p><strong>Argue for the Bill<\/strong>. The argument shows gratitude for the other person\u2019s kindness. Immediately accepting someone\u2019s offer to pay is imposing. Letting someone else win the argument when you&#8217;re expected to pay is rude.<\/p>\n<p>During the argument, don\u2019t be surprised if someone waves their hand in your face while they discourage you from paying. If everyone knows you&#8217;re supposed to pay, stand your ground and don&#8217;t let them win. (Side note: If you&#8217;re waiting for a table and you see a group of people start arguing and waving their hands in each other\u2019s faces, their table will be clear soon.)<\/p>\n<p><strong>Splitting the Bill<\/strong>. The typical practice is that one person in the group pays for everyone, and the next time that same group gets together, it will be someone else\u2019s turn to pay. However, splitting the bill\u2014referred to as \u201cAA\u201d\u2014is a growing practice.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p>To make sure you&#8217;re using these phrases correctly, you can also look them up in a dictionary for added context.
